Cranberry + Goat Cheese Toasts ~ There’s no doubt about it the holidays are here. Yes, the local radio station has already been pumping out holiday tunes and I have been getting massive amounts of Black Friday Flyers for the last month –– I think I could wallpaper my whole house with them. While we are gathering with our families and friends and loading up our plates with turkey, stuffing, and copious amounts of seasonal side dishes let us not forget we are to be thankful for what we have. You may not even think about it but most of us own or use a regular electric or gas oven everyday and don’t even think twice.
In many countries some can only rely on the use of a pit filled with firewood to cook their family meal. Could you imagine? Having to walk for miles just to gather the wood, then sit around a smoke-filled area so you can put hot food into the bellies of your family? For those of you that have been following along over the last few months you know that I have partnered with the fabulous Solavore Oven group. They are out to make cooking more environmentally friendly and this week they have started a new Indiegogo Campaign that I hope you will be apart of: Solavore Works.
What is Solavore Works? In a nutshell –– it’s a campaign working to bring clean-fuel cooking to the world’s 4 billion people still cooking over open fire and right now it’s buy one, give one solar oven. Each oven comes complete with cooking instructions and recipe ideas that you can use in your own backyard or while out camping or on the beach.
Now you can be thankful for your solar oven and know that you helped another family to have their very own. It’s a pretty wonderful idea, in my opinion, and it could be a fantastic gift for any foodies in your life. Visit HERE to learn more!
As we are toasting (get it?) and thanking –– let’s not forget the holiday snacking that is about to begin. Start off your Thanksgiving meal with some of these delicious Cranberry + Goat Cheese Toasts. Crispy toast topped with creamy goat cheese and zesty cranberry sauce make a great (and easy) addition to your holiday festivities.
|Prep Time||5-10 Minutes|

- 6 ounces goat cheese
- 1 Medium baguette or crusty bread sliced and toasted

- Place cranberries, brown sugar, orange juice, water, and salt into a solar oven safe pan and cook for 3 hours or until cranberries are fork tender -- stirring them at the halfway point. Remove from the oven and set aside to cool.
- Lay toasts out onto a serving dish and smear each one with a Tablespoon of goat cheese. Next, top each one with a dollop of the cranberry mixture and a couple of fresh rosemary leaves and serve.
***If not using a solar oven you may use a slow cooker for 2-3 hours on low.***
